we actually do know why and the answer is right here in the text above, its the whole complex that works , not a singled out element. Enzymes have also been known by nutritionnists to help fight many diseases and they are mostly found in fruits. They promote a better digestive process which in turn promotes better health by eliminating digestive complication. Basically , everything in nature is already in place for you, all you have to do is pick it up and use it, why as humans do we always feel a need to mess with it? lol.

Thanks for the excellent advice....NOT.....ask for a diet for fatty liver and all I got were studies and stats. All I wanted was a good diet. This is the worst info ever

meh. nothing new here. so called "researchers" suggesting to "eat right and exercise". These pundits are NOT working in tandem, have conflicting advice with some including "dairy" and "fish" (not good).

when some large powerful but well-meaning entity decides to get serious about longer lives, let us know. until then, everyone just dont do "too much" or "too little" , eat "better", "exercise". haha isnt that a joke?

It's all about acid foods and alkaline foods. If we have a pH7 balance between these two types of food, we are healthy, Period.

Acid eats away at the cell, the basic element in our bodies. Too much red meat, any dairy, grains, alcohol, coffee, and especially diet colas (most acid) just make the cell malfunction. Supermarket fats keep the cell from absorbing oxygen.

Cure: Change your diet.......and reduce the toxins that you also put in your bodies. Result: healthy cells. EAt the good fats (raw coconut oil, olive oil (some are now diluted with bad oils), raw flaxseed oil, avocados.)

Thank you KE for including that link. I listened to Dr. Esselstyn's talk, some things I certainly have never heard from a physician. I understand the ideas and reasoning and am wondering where to find good recipes. Also, my own situation is a bit different, I need to ensure that I get enough calories so I don't lose weight, how can a person address that with a vegetable and fruit diet? I am open to bread, just want to make sure it's the right one.

I am close to following the Esselstyn diet. Almost no added fat and meat. I do eat very low fat dairy milk and egg beaters but no cheese.

A few things.

I may have been malnourished for iodine as my throid enlarged.

Also many of those on the mediteranian diet do not use preservatives. I work out with an 84 year old italian who makes most of his own food and wine including sausage, does not wear glasses and is helping his grandson remodel a house. He recently replaced a water heater and drug the old one upstairs by himself. This is one case but it makes me wonder. He is a little over weight. I believe that his wife is going strong also.

My hunch is that plastics and household chemicals and insecticides might cause some diseases.
