Popeye's fave has plenty of antioxidants and is a great source of folic acid and iron (though it should be eaten with foods that contain vitamin C, such as tomatoes, to improve absorption). "Branch out in that family of leafy greens," says Dawn Jackson Blatner, a dietitian and author of The Flexitarian Diet. That means mustard greens and collard greens—good sources of vitamins A and C and of carotenoids, another kind of phytochemical. Cruciferous greens such as broccoli, Brussels sprouts, and cabbage have their own beneficial components, including a chemical called sulforaphane that shows some anticancer properties in lab tests.
