OK, two things I want to discuss here. I'll break it up into 2 posts to make it easier to read.
1. The author keeps talking about calories, like that's all that matters. But not all calories are created equal. The very worst is sugar calories: glucose, sucrose, fructose. Unless you're working out in some way while you're consuming these sugars, your liver makes a shortcut for those calories to turn into stored fat instantly.
I won't go into too many details here, but I encourage you to get on YouTube and do a search for "Sugar: The Bitter Truth". There's a 90 minute version that is very educational, but can be very dry. There's also an 11 minute version that covers the same points, but very quickly (make sure you're paying attention). I guarantee that you won't see sugar in the same light again.

calorie-free sweeteners like Splenda and Equal are horrible choices. One should read up on them before using them. They can cause serious health problems.

The suggestion to use artificial sweeteners instead of sugar is ill-advised. Studies were published a couple years ago showing that people who drank diet soft drinks were fatter than people who drank regular. (I suggest drinking neither.)
Artificial sweeteners are neurotoxins that have been linked to neurological diseases like Parkinson's, Alzheimer's, and others. Here's a short list that should be avoided at all costs:
aspartame (Nutrasweet)
sucralose (Splenda)
acesulfame K
acesulfame potassium (same as above, K is the symbol for potassium)
saccharin (Sweet and Low)
The reason sucralose was rushed to market was because of all the bad press aspartame was getting. No long-term studies were conducted on sucralose before the FDA approved it, and some researchers suggest sucralose is even more toxic than aspartame.

Oil/fat is actually needed to fully absorb the nutrients in salads. Eating them with low fat dressing is shooting yourself in the foot.

Be VERY careful about using artificial sweetners. For about 30 years I battled what I thought was IBD. Had numerous tests including colonoscopies, MRI's, Barium Enemas, Upper GI etc.etc. Tried everything and couldn't control diarrhea. Finally I learned about the evil of artificial sweetners. I was only using it in my coffee in the morning and drinking a diet drink in the afternoon. I cut them all out and for almost two years my stomach has been entirely normal. If you have this problem, my suggestion is to eliminate ALL artificial sweeteners for a couple of weeks. If you see an improvement, add back the sweeteners one at a time and see which is the offender. I found that I could not use any of them.
