Isn't it a poor idea to include dairy when many people with the condition also suffer from lactose intolerance? Sounds like an article that should be edited by a dietitian or md

Sounds delicious!! I am always looking for good sounding Gluten Free Recipes. I have Celiac Disease and CANNOT eat gluten. I will try this one out soon.

Not the best recommendation for how to prep the squash itself. We poked the squash at least 25 times, a full paring knife's length into the squash each time. And yet, it exploded somewhere around the 10th minute. Not good.

Better (safer!) idea: Cut the squash in half lengthwise, scoop out the seeds, THEN put it on a microwavable dish cut side up for about 10 minutes, or the strands break up easily with a fork.

Or just do it the old fashioned way and bake it for 30-45 minutes at 350.
