For doctors to say that they don't know why Diabetes Type 1 is on the rise is pretty pathetic. I read a book from 2006 called Defeating Diabetes by Dr. Michael Lyon where he references literature that points to modern lifestyles where toxics such as nitrates and other radicals in foods such as hot dogs and cured meats and in the water and in the air make changes to Beta cell structures, which in turn make the immune system attack them as foreign. Even though Type 1 starts out as a genetic disposition, it can be prevented if only mainstream medicine would focus more on nutrition and advocate against certain food processes.
