Food certified organic by the USDA has to be grown according to organic standards, which include the use of appropriate fertilizers and ban the use of genetically modified seeds, and the grower is inspected to verify this. (I'm paraphrasing here from Marion Nestle's "What to Eat," which is a great resource for deciphering health claims for foods. Of course it's more complicated than just "organic=good," which is why her book is so helpful.)

What private or government entity verifies that the organic label on a product is genuine and not counterfeit?
