Here’s a typical day of meals on the Engine 2 Diet:

Breakfast

Rip’s Big Bowl—

¼ cup raw, old-fashioned oats

¼ cup Grape Nuts or Ezekiel brand equivalent

¼ cup bite-size shredded wheat

¼ cup Uncle Sam cereal

1 tbsp. ground flaxseed meal

2 tbsp. raisins

Lunch

Green pizza—

1 Kabuli (chick-pea) or whole-grain crust

½ jar pasta sauce

4 oz. frozen spinach, thawed, rinsed, and drained

¼ cup fresh whole basil leaves

1 green bell pepper, diced

1 cup broccoli florets

¼ cup sliced mushrooms

½ onion, diced

1 clove garlic, minced

1/8 cup finely-ground, raw cashews

Dinner

Portobello burger—

1 Portobello mushroom

1/2 tsp. low-sodium tamari soy sauce

1/2 tsp. vegetarian Worcestershire sauce

¼ red onion

1 whole-grain hamburger bun

1 tsp. Dijon mustard

Slice of tomato

Slice of lettuce

Dessert

Blueberry Dumpster Fire Cobbler—

1/6 cup whole-wheat pastry flour

Nearly 1/2 tsp. baking powder

¼ tbsp. vanilla extract

1/6 cup milk substitute

¾ tbsp. agave nectar or maple syrup

½ cup blueberries
