Featured Recipes: Personal Portabella Pizza

Baking time: 15-20 minutes

Ingredients

  • 1 portabella mushroom cap, 5 inches across
  • Cooking spray
  • 1/4 cup pizza sauce
  • 1 slice (1 ounce) lean, deli-sliced ham, finely chopped
  • 2–3 fresh basil leaves, chopped
  • 3 tablespoons shredded part-skim mozzarella cheese

Instructions

Preheat oven to 400°F. Trim mushroom stem even with cap. Place mushroom cap (gills facing upward) in a small baking pan coated with cooking spray. Layer pizza sauce, ham, and basil in cap and sprinkle evenly with cheese. Bake for 15–20 minutes, or until mushroom is tender when pierced with a fork and cheese is melted.
